- Braise onion, carrot and celery until soft. Add mushrooms and braise uncovered for 5 minutes.
- Add garlic, ginger, whole spices and dried herbs and braise covered for approx 10 min.
- When the mixture is nice and fragrant, add canned tomatoes and tomato paste and a cup of water and simmer over medium heat, pot covered (approx 20 min).
- When sauce is thick and well incorporated, return meat to the pot and continue to simmer for another 45 minutes. Season to taste with salt, pepper and brown sugar.
- Add potatoes and simmer until they are done. Remove potjie from the coals and leave to stand for 20 minutes.
